Let’s talk balls shall we? The internet is awash with talk of balls. I had to know what it was all about. Turns out it's nothing that needs to be discussed after 10.30 pm but in fact a little no bake, energy snack that is also the perfect lunchbox buddy. Who knew! 

 

The concept is simple. You take dates and other dried fruits and process them together with a little sticky stuff. You roll them into balls and coat them in yummy things. Pop them in the fridge and they are the perfect pick me up when sugar levels are low and the 3pm blues have well and truly kicked in.

I have started running again and I have found that the minute I finish I need something to eat. These little beauties are the perfect thing. Just be careful you don’t eat all of them at once!

I like them sweet and zingy, hence the fresh ginger pop I add. Feel free to leave it out or try just a pinch of dried ginger if you want the flavour without the sizzle! I have also seen many recipes that call for coconut oil to be added as the sticky stuff but I just find that it leaves your teeth with that "I just ate some oil" feeling that I really dislike.  Treacle (molasses for my Canadian friends),  is my preferred sticky stuff with its deep rich flavour.

Oh, and let’s keep the snacks out of the gutter shall we, hence the name truffles not balls. I much prefer to reach for a truffle than a ball!

DATE & GINGER TRUFFLES

WHAT YOU NEED
1 cup dates
1 cup dried cranberries
1 tsp fresh grated ginger
pinch of sea salt
2 tablespoons of treacle (molasses)

To Roll: Toasted coconut- to toast my coconut I simply dry fry it in a hot pan, moving is constantly till its perfectly golden.  

WHAT YOU DO
Simply add the truffle ingredients to a food processor and blitz till the mix it combined.  With wet hands, create little balls and roll in the toasted coconut.  Refrigerate for at least an hour before you dive into them and the flavours will develop perfectly together.



There are so many different variations of these you could make.  Change up the dried fruits, add some seeds, roll them in chopped nuts, coco powder, seeds etc etc!
