WICKED PEANUT SAUCE

My Wicked Peanut Sauce is the product of tasting something when out and desperately trying to recreate it at home.  I use this sauce on fat udon noodles, drizzled on sandwiches, added generously to wraps and tossed enthusiastically through salads.  This sauce makes me happy!

 It's easy, fast and a store cupboard winner.

WHAT YOU NEED

1 tablespoon peanut butter (or any other nut butter)
Juice of 1/2 lime
1 tsp soy sauce
1 tsp sriracha (or any other chilli based sauce)
fat pinch of dried chilli flakes
fat pinch of toasted sesame seeds (I used black ones but feel free to use any you have)

WHAT YOU DO
In a bowl blend everything together with a spoon until smooth.
You can add a little water if you need a thinner sauce.


If you don't own a spiralizer (yet), my handy little carrot julienne tool is fab!  I love that it is shaped like a carrot!  If you don't have a huge kitchen and avoid bulky kitchen tools I highly recommend picking up a julienne tool.  I use mine so often as it's way easier to clean that a spiralizer!
