It's been a very long and very cold winter.  I am not complaining about it, rather stating a fact.  Winter has many charms and those crisp, frosty days with the shocking blue skies are not something to ever moan about.  

But when the thermometer reads -30 again a little something to warm the soul can go a long way.......
Salted Caramel; check
Dark Chocolate; check 
Crunchy sea salt; check
Delicious Spiced Chic Choc Rum; it would be rude not to! Check

I present my Spiced Rum Salted Caramel Hot Chocolate.  
WHY IS IT CALLED CHIC CHOC SPICED RUM?
It’s made with six indigenous plants that grow in Quebec’s Chic Choc mountains on the Gaspé peninsula. They include Peppery Green Alder, Pine Forest Spikenard, Witherod Berries, Lovage Root, Wild Angelica and Sweet Gale (also called Bog Myrtle). Chic Choc Spiced Rum is the latest creation from the award winning Domaine Pinnacle company that also created Ungava Premium Dry Gin.

OFFICIAL TASTING NOTES;
Bright deep amber colour; enticing aromas include notes of cinnamon, vanilla, ginger, angelica root, pepper and dried fruits; on the palate it is full bodied and warm, with a rich and round texture and flavours of sweet and savoury Nordic spices.

SPICED RUM SALTED CARAMEL HOT CHOCOLATE
30ml Chic Choc Rum
2 tsp salted caramel sauce or caramel sauce and 1/2 tsp sea salt
150ml milk
40g %70 chocolate

WHAT YOU DO
Melt together the milk, chocolate and caramel sauce.  When its just bubbling take off the heat and add the rum.  
If you want to rustle up some salted caramel sauce, here is my recipe (it's fabulous on ice cream, drizzled on your coffee and awesome on S'mores);

SALTED CARAMEL SAUCE
150g soft brown sugar
250ml whipping cream
40g unsalted butter
2tsp sea salt

WHAT YOU DO
Just heat everything gently in a pan.  Store in the fridge in a sealed jar.

Roll on summer, I am ready for the change of season, but until the snow melts, you will find me not too far away from one of these Hot Chocolates!
