BEER BATTER- FISH STICKS

Stick it on a stick, drape it in beer batter and deep fry it!  Oh yes please.........

Fish and chips is a UK staple and even though you can get them in Canada, it's just not the same.  You need to eat them by the sea whilst being attacked by crazy seagulls.  You need the grey sky above and the threat of rain to make them taste like the best fish and chips ever! 

This batter would be excellent to coat any number of things ready to hit the deep fryer but in this case it was some white fish. 

I think next it may be some onion rings.........
 

BEER BATTER

INGREDIENTS

  • 250g All purpose/plain flour
  • 60g cornflour
  • 300ml sparkling ale ( I used the hubby's home brew)
  • 300ml soda water

METHOD

  1. Place the flours in a large bowl and whisk together.
  2. Add the beer and soda water and mix to incorporate.
  3. Whisk vigorously to get rid of any lumps.
  4. Let stand for 10 minutes and then whisk again for 30 seconds. (If for some reason there are still lumps, simply strain them out)
 
TIP: The batter will fry crisper if no salt is added and it is not refrigerated.
