VEGGIE WRAPS

Our school has a shared snack in Kindergarten each day.  The children all sit down together and share a snack delivered by a parent volunteer.  Such a great idea to get them trying new and different things.

I always try and bring something a little different and a firm favourite was fruit kebabs, although the kiwi raised a few eyebrows!  This time I decided to hit up some veggie action in a fun take on sushi- but with no rice or fish, so not technically sushi!!


VEGGIE WRAPS

WHAT YOU NEED;
* Large soft tortilla wraps
* Thinly chopped veggies- I used red peppers, cucumbers and carrot
* A few green leaves- I used rocket
* Cream cheese
* Mayonnaise or sweet chilli sauce

WHAT YOU DO:
Mix together the cream cheese and either a little mayo or sweet chilli sauce till you get a smooth creamy paste- you need a good spreading consistency.


Cover the whole of one side of the wrap with the cream cheese mix.  Place veggies and greens down the middle of the wrap.  Fold and tightly roll with the veggies in the middle.  Slice into bite size pieces and enjoy.


Perfect for kids lunch boxes, after school snacks and perfect for pre dinner nibbles.
