LEMON AND MINT HUMMUS

The kis and I love hummus!  It is the perfect way to keep them happy at lunchtime.


This lemon and mint hummus was made during Spring Break- I made a large batch, thinking I could eat some myself later only for the kids to finish theirs and then start on mine!


LEMON AND MINT HUMMUS

  • 1 tin of chickpeas, drained
  • 2tsp tahini paste (sesame paste)
  • Juice of a large lemon
  • 10 mint leaves
  • 1 tablespoon extra virgin olive oil
  • Salt and Pepper to taste

METHOD

Add everything to a food processor and blend until it is coming together but still has some texture.  Taste and add salt, pepper and even some extra lemon juice till you have the perfect pop of flavour.  If it looks like ti is not coming together just add a little more oil.

Serve with your choice of crisp, chip or crunch vegetable.
