"KICK ASS" CRUNCHY SLAW

A recipe name goes a long way in the allure of me wanting to make something.  Just like a picture, a name can inspire me to make something instantly.  This recipe gets its name from the first words to come to my lips after I took a big bite of this slaw.  It needs no further explanation- its just kick ass good! 

Lip tingling hot, sour, sharp, sweet, crunchy, salty and zingy all at the same time.  It's like a work out for your taste buds.  

I am so fond of this flavour combination.  Its a mouthful of flavour with every crunchy, crispy bite.

"KICK ASS" CRUNCHY SLAW  

THE JUICY STUFF

  • Zest and Juice of 1 lime
  • Thumb size piece of ginger, minced/grated as finely as possible
  • 1 crushed, dried chilli or 1/2 tsp chilli flakes
  • 1 tsp sesame oil
  • 1 tsp light soy sauce
  • 1 tsp sugar

METHOD
  1. Mix everything together and store in a jar until just before you want to eat the slaw.  Dressing it in advance will mean you loose some of that vital crunch!


THE CRUNCHY STUFF 
Use anything that is crunchy and colorful! Just cut everything into thin strips.
TIP: Carrots are best if you use a vegetable slicer and cut thin ribbons (see image below)
This is the combination I used here;

  • Fennel
  • Red onion
  • Sugar snap peas
  • Carrots
  • Yellow pepper

Toss everything together at the last moment before eating.  Apply greedily to your face and enjoy!
