I am a little behind with this challenge! I blame a fabulous trip to the UK and a killer case of jet lag family- can someone please remind my children that waking before 5am is not cool, not cool at all!
This is a little summer in a bowl and would of course be better with home grown strawberries but in this case, shop bought ones! The toasted coconut gives a great flavour and crunch. This works with ice cold milk or yoghurt.

This is a sharp and tangy twist on Weetabix. I actually chop the apple up into thin slivers and enjoy with ice cold milk, but in the interests of being a person who likes taking photos of food, a whole apple seemed prettier!
