FAST FOOD: AWESOME THAI SAUCESaturday, January 23, 2016
Its lunchtime, you’re busy and you’re hungry. You need fast food and I am not talking about golden arches and finger licking solutions here. Real fast food for real people who like real food right now!
I have a repertoire of fast food solutions that never fail me. The ingredients are always on hand and my hunger can be addressed quickly and everybody is happy. Trust me; you won’t like me when I am hungry!!
My job in a Thai restaurant kitchen was one of my favorites for many reasons; the people, the buzz of a tiny kitchen filled with fiery women and their excessive use of Thai swear words and most of all the food. This sauce is my nod of appreciation to that little kitchen with all of its fire and excitement. It works perfectly with pork, chicken, beef, vegetables, seafood and in this case some steamed salmon.
Whizz up a jar of this sauce and your fridge will never seem dull, trust me!
AWESOME THAI SAUCE
- 1 handful of coriander (cilantro)
- 10 mint leaves
- thumb size piece of ginger, peeled
- 2 cloves garlic, peeled
- 1 tsp sea salt
- 1 large red chilli, (remove seeds if you want a little less fire)
- juice of 1 lime
- 1 tbsp ponzu
- few splashes of fish sauce
In a food processor blend together everything. Place in a jar. If possible and time allows, give the marinade 20 minutes to work its magic.
