My job in a Thai restaurant kitchen was one of my favorites for many reasons; the people, the buzz of a tiny kitchen filled with fiery women and their excessive use of Thai swear words and most of all the food. This sauce is my nod of appreciation to that little kitchen with all of its fire and excitement. It works perfectly with pork, chicken, beef, vegetables, seafood and in this case some steamed salmon.

It’s a perfect fast food solution and my Thai steamed salmon only took 6 minutes to cook in the steamer- now that's my kind of fast food.

AWESOME THAI SAUCE
WHAT YOU NEED
- 1 handful of coriander (cilantro)
- 10 mint leaves
- thumb size piece of ginger, peeled
- 2 cloves garlic, peeled
- 1 tsp sea salt
- 1 large red chilli, (remove seeds if you want a little less fire)
- juice of 1 lime
- 1 tbsp ponzu
- few splashes of fish sauce
WHAT YOU DO
In a food processor blend together everything. Place in a jar. If possible and time allows, give the marinade 20 minutes to work its magic.
