Friday night is movie night in our house. PJ's on, extra blankets on the sofa and plenty of movie snacks to pick at as we watch. Of course there is popcorn! I give you two recipes for perfect popcorn; one sweet and one savoury. My kids prefer the sweet- of course!
To start both of these recipes you need some freshly popped corn. Of course there are many ways to pop a kernel! I prefer the brown paper bag microwave method;

- Add 1/4 cup popcorn kernels into a lunchbox-sized brown paper bag.
- Fold the top of the bag over three times and press down on the folds to keep the bag from opening
- Microwave for approximately 2-3 minutes and wait until there are more than 3 seconds between popping sounds
- Carefully remove bag and open the top to release the steam
140 g butter
140 g soft brown sugar

2 tsp. golden syrup/corn syrup
sea salt flakes
Melt the butter, sugar and syrup together over a gentle heat. In a large bowl drizzle the toffee syrup over the popped corn and toss with two wooden spoons, just like you would if you were tossing a salad. Tip onto a baking sheet in a single layer and break apart any large bundles of popcorn. Sprinkle with sea salt flakes and allow to set. This is also super delicious served warm and drizzled over ice cream (or you can just stand by the pan dipping marshmallows into the slightly cooled mixture as I caught my son doing when I last made this!)
This savoury popcorn is the perfect party nibble food. Just leave a large bowl of this by your guests and it will keep them happy as they drink and chat.
SAVOURY POPCORN: CHILLI & CUMIN
1 tsp. chilli flakes
1/2 tsp cayenne pepper
1 tsp. ground cumin
Fat pinch sea salt flakes
1/2 tsp cayenne pepper

2 tsp.melted butter
Mix the chilli, cumin & salt together. Toss the popped corn in the melted butter then spread on a baking sheet in a single layer. Sprinkle the popcorn with the spice mix.
