WINTER SPICED DAIQUIRI: CHIC CHOC RUM

“There is a Rum for everyone, but they don’t know it……yet”

Famously drunk by John F Kennedy and Ernest Hemingway the Daiquiri is a fabulous example of simple ingredients working together to create a perfect drink. 

Daiquirí is also the name of a beach and an iron mine near Santiago de Cuba.  The drink was supposedly invented by an American mining engineer, named Jennings Cox, who was in Cuba at the time of the Spanish–American War.

I wanted to add a little twist to the classic by creating a delicious syrup to add to the drink in place of the simple syrup.  I created a Winter Spice Syrup;

WINTER SPICED SYRUP

WHAT YOU NEED
1/4 cup brown sugar
1/4 cup maple syrup
1/2 cup water
Sprig of rosemary
2 x cinnamon sticks
Pieces of orange peel

WHAT YOU DO
Place everything into a pan and heat till just simmering.  Allow to cool and infuse.  Strain and store in the fridge.  

WINTER SPICED DAIQUIRI

WHAT YOU NEED
50ml Chic Choc Spiced Rum
25ml orange juice
1tsp winter spiced syrup

WHAT YOU DO
Place everything in a shaker, add ice and shake till the metal of the shaker feels cold.  Strain and enjoy.
