SPICY BLACK BEANS

I love fried eggs, black beans and avocado for breakfast. I also love not having to set the alarm clock but there is not a lot I can do about that one. Black beans and fried eggs I got covered.
Make a batch of these black beans and then just heat a serving up for breakfast and life is all good. They are also great in salads and awesome in tacos. SPICY BLACK BEANS
WHAT YOU NEED
1 tsp olive oil
1 garlic clove, minced
1 x 400g can black beans, drained and rinsed
1 tsp balsamic syrup/reduction
1 spring onion, chopped
1 tsp dried chilli flakes
1 tsp cumin
1 tsp smoked paprika
small bunch of chopped coriander
WHAT YOU DO
In a large frying pan, heat the oil and add the garlic and spring onions. Fry until golden & softened, then add the spices and a fat pinch of sea salt. Add the black beans and pour in the balsamic syrup. Cook until warmed through, crushing gently with the back of a spoon. Taste and adjust seasoning. Sprinkle with the chopped coriander.
A happy breakfast makes for a happy day!
