CRUMBLE TOPPING

I love a good fruit crumble.  Apple, rhubarb, blackberry or gooseberry to name a few of my favourites but really any baked fruit with a great, crispy topping of crumble mix will make me a very happy girl! 
 
 
 
Here is my crumble mix recipe and it never fails to disappoint. 


 
You can also add 100g of flaked almonds to the crumble mix and simply add with the Demerera sugar and fork though- it is delicious with or without the almonds, but they certainly make it look a lot prettier when toasted with the heat of the oven. 

CRUMBLE TOPPING

 

INGREDIENTS

 
  • 110g plain flour
  • 1 tsp. baking powder
  • 75g cold butter, diced
  • 75g Demerara sugar

METHOD

  1. Place the flour and baking powder in a mixing bowl and rub in the cold, diced butter between thumb and fingers (or in a freestanding mixer or food processor). When you’ve finished, it should resemble rough, pale oatmeal.
  2. Stir in the Demerara sugar with a fork and sprinkle generously onto your waiting fruit. 
  3. Bake in a Pre-heated oven- 200C/400F for about 30 minutes, till golden and bubbling! 


TIP: To make sure your fruit does not make the topping go soggy, simply add a tablespoon of ground almonds to the fruit to help soak up the excess moisture from the baking fruit. 

Serve warm with lashings of cream or vanilla ice cream- or both!
