WASTE NOT, WANT NOT- PIZZA JACKETS
Monday, March 03, 2014It's Pizza night once a week in this house and we love making pizza!
We had some leftover slices of pepperoni and what better than some soft on the inside, cripsy on the outside double baked jacket potatoes to use it up;
1. Wash, dry and rub the potatoes with a little oil. Bake in a hot oven for about 40 minutes and allow to cool.
2. Grate some cheese;
3. Chop some pepperoni;
4. Chop the potatoes in half and scoop out the centre, carefully leaving the skin in tact;
5. Season the potatoes and mash them with a little olive oil, some of the grated cheese and the sliced pepperoni and load the mixture back into the potato skins. Top with more cheese and bake till golden brown;
