CHUNKY MONKEY PANCAKES

Tell me that name does not want you to rush to the kitchen right now and whip these babies up right this second- possibly just me then!

- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup milk
- 3 tablespoons butter, melted
- 2 eggs
- 1 tablespoon white sugar
- 1 large banana, diced
- 1/2 cup chocolate chips- chopped up if big ones. You can use any type of chocolate, we like the semi sweet chips
- Combine flour, baking powder, baking soda, and salt in a large bowl.
- In a separate bowl, whisk together the milk, melted butter, eggs and sugar. Make a well in the center of the dry ingredients and stir in the wet ingredients, being careful not to over mix the batter.
- Gently fold in the banana and chocolate chips.
- Heat a frying pan over a medium heat, and coat with a bit of the leftover butter from whatever you melted it in. I use my silicone brush to just swoosh the melted butter over the pan
- Pour 1/4 cupfuls of batter onto the pan, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.

ReplyDeleteWe love pancakes and I have quite a soft spot for chocolate, and gin, but that's another story!
