Wednesday, November 13, 2013Sometimes just three ingredients can result in the most fabulous of creations. It's this kind of kitchen magic I like to display for those who say that baking is way too complicated.
Stand by your bowls people, three little things and some magic........................
COCONUT BITES
INGREDIENTS
- 2 eggs
- 225g desiccated coconut
- 140g caster sugar
METHOD
- Pre-heat oven to 180C /350 F. Grease a baking tray
- Stir the coconut, sugar and egg in a large bowl and leave to sit for 20 minutes to firm up a little.
- Using a tablespoon measure squeeze the mixture in and gentle flip out onto the baking tray.
- Put in oven for 25-30min, but keep an eye on them as they go from perfect golden brown to overdone quickly. Remove from tray and cool on a wire rack.

Gosh! I remember my mum making these when I was a little girl - and oh dear, that's a very long time since!! She used an egg cup to shape them and flipped it upside-down. They really are delicious. I'll have a go myself. xxx
