SEASONAL SALADS

The good old salad is a year round accompaniment for me.  A good salad can play a vital supporting roll for many a winter feast but I feel they need a little more bulk and substance to hold up against winter stews and hearty cold weather fare. 

Here are my favourite salad's of the season and of course with the addition of red things they are instantly festive too! 


RED SALAD
Cherry tomatoes, red onions, red kidney beans and chopped parsley tossed in a dressing made from a little olive oil, red wine vinegar and good squeeze of lemon juice,

ROASTED RED PEPPER AND POMEGRANATE SALAD
Roasted red pepper (your own or from a jar), the seeds from 1/2 a pomegranate tossed with a dressing of olive oil, the squeezed other half of pomegranate and a squeeze of lemon juice. 


SALAD SPRINKLES
In a jar mix together a variety of seeds and nuts to sprinkle over any seasonal salads.  This mix is slivered almonds, pumpkin and sunflower seeds.
