Thai Green Salad Dressing

I like my food to kick back at times.  I lust after that chili fog that tingles in the back of your mouth.  As the weather warms up the season of salad is coming and a few lettuce leaves will thank you dearly if you liberally toss in a bit if this chili magic!  Oh, and on a waist line friendly note, there is no oil in this dressing so you can toss with abandon without dietary guilt! 


Thai Green Salad Dressing

Ingredients
2 tablespoons fish sauce
Juice of 1 lime
1 Thai green chili (de-seeded if you a chili wimp)
1 cloves garlic, minced
1 tablespoons light soy sauce
1 teaspoon sugar
Coriander/Cilantro
Spring Onions/Scallions

Method
Whiz everything together in a food processor- or hand chop to fine dice and mix with wet ingredients.  You may need to add more sugar to taste as this has quite some bite!

Can be mixed with any salad, drizzled over cooked chicken or prawns also good generously dolloped over hot or cold rice too.
