PRONTO ALMOND PESTO

Wednesday, July 16, 2014

Kids don't have a warning phase.  When they say they need the bathroom they need it now.  When they say they are hungry they need it like yesterday!  Pasta is my saving grace of fast food.

Pasta and pesto is a firm favourite and this takes only as long as it takes your pasta to cook to get it to those hungry mouths.  This is barely a recipe and I have not stated any quantities- it's a simple chuck it together kinda of deal.

Just throw some basil, parsley, sliced almonds, grated Parmesan cheese and olive oil into small blender and blitz.  You can add a little garlic if you like but my boys like this simpler version.  Adjust the consistency with more olive oil as required.
Drain the pasta and reserve a little of the cooking water.  Mix the pasta, a little pesto and add a few drops of the cooking water to enrich the sauce and help it stick to the pasta.  I don't use much of the pesto and take the time to stir it through the pasta rather than drowning it in sauce.  Serve with a good grating of Parmesan cheese on top.
Quick, delicious and happy children all around!
